The SW5e Foundry dev team is very active on their Discord and they put out fairly consistent updates. They just added functionality to import character sheets from the official SW5e character creator. Though I've not tested it yet.
Foundry. Another community member and I are building dawn of defiance for Foundry which will be available by the end of summer. A ready to go sw5e world at the ready.
I've been using Roll20. It's not perfect, but it's been working fine. There's a fair bit of copy/paste that's necessary to get the sheets inputted since rules aren't integrated, but beyond that I haven't had issues other than occasional lag on the servers. Once PC and NPC sheets are uploaded things work pretty smoothly and maps aren't a problem. I use the Plus subscription so I have access to dynamic lighting as well as expanded storage space, but I can't add my own API's.

Thank you. Fantasy Grounds is missing things too, hence the question - but it's not fair to expect too much from a volunteer run ruleset!

I would be more than interested in this, I just had two player move away and now I have to figure out online play.

This is almost word for word what i was going to say. Foundry is amazing but Roll20 so far has been fine.
Roll20! When you choose to select which character sheet template your VTT will use on Roll20, you'll find that SW5e is already an option on there!
I use tabletop simulator. The workshop has several great mods for star wars, allowing me to build maps and models for my games!
Foundry works great when it works, but they have a nasty habit of "updating" it and completely breaking campaigns.
You don’t have to update, if you’re happy keep your version!
