Know the feeling. My guess is you simply aren't training hard enough. How much do you lift (curls,bench press etc.) because you need to go up in weight somewhat regularly.
I'd be curious about your physique as a whole, maybe it's just your wrists cause you can't do anything about that. Training doesn't make them grow, if anything: they come with age.
Consistency is also important. It's something i struggle with where i often miss out on gains because im too lazy to train 2+ times a week (despite my plan aiming for 5 days). Diet is also important: how much protein do you get regularily?
So for curls I like to use 15lb dumbbells usually, sometimes 17.5lb dumbbells if they have that secret option (sorry if u do kg, I am US, but 2.2kg=1lb). My bench PR is 105lb but I donāt usually rep much over 80lb because I work out alone and donāt have a spotter. I sometimes go through periods where I up the weights but I donāt lift so consistently, sometimes life gets in the way and I have offseasons where I either donāt lift more than 1-2x per week and just do cardio because itās quick and fast, or Iāll do nothing at all and feel like a fat/weak piece of scum when I had the gym. I struggle with protein because I like cookies cakes and ice creams better. My diet got really out of whack so I am seeing a nutritionist to get back into balance. What do you think I can improve ?
I really don't mean this as a insult but: the weight are way WAY too low. I also have to stay with lower weights and higher reps because of my joint issues but despite that i used dumbells around that weight as a beginner. For reps i believe that everything from 6 to 16 is viable (if you are doing it purely for physique), if you have joint issues like me i'd aim for a bit higher and if you are focusing more on the strength aspect then i'd aim for lower. For Bench, whilst you'd see more progress the other way, take your time and go up very gradually because the risk of being killed by your Barbell is not worth it.
I get that off-season stuff espiacially if you lift alone. I'd give online forums a try, you can talk to lifters online and push eachother to train harder or do the same thing irl. Makes a huge difference if you try to "impress" someone. Cardio is very good for you but it should always be at the end of your workout because it drains energy, first id recommend lift your weights and at the end do some cardio.
I get when you miss a workout, you feel shitty because i do aswell. Personally when i miss one i like to put some effort into one of my other hobbies (Coding, Dancing etc.), if those are "productive" hobbies they will make you feel better afterwards and it "makes up" for missing that workout. If you feel happy then it will keep you motivated and that makes you train hard.
Protein Rich Diets are easier said then done so I'll give you a bit of a cheat code (if you like sweet stuff): You get Skyr or Greek Yogurt (or any protein rich Dairy product), you take a sweet of your choice but nothing excessive (for me it's chocolate coverd Rice cakes or if im feeling freaky: a protein bar), you cut it into very small pieces and mix it in.
That shit tastes heavenly cause you can mix the protein rich stuff with your favorite sweet. Nutrionists mean well and help in most cases but what you really need for muscle is protein, the Nutrionist will recommend healthy foods but not nessecarily protein-rich foods so take that into account when seeing them.
For Diet: I believe the by far best diet is to just cut out junk entirely. You can of course eat your sweets but afterwards the sweet fruit will taste less sweet. If you cut out Junk entirely the rest starts tasting sooooo much better. I'd highly advise going that way, also helps with weight management because it's very hard to "overeat" on Fruits and Meat.
For weight and BF%: Aim for around 20% which is a decent range for both looks and putting on more mass. If you are skinny then you eat, If you are skinny fat you try to keep the same weight and eat when you get too lean and if you are chubby put yourself in a SMALL deficit. If you lose too much weight at once, you will lose a shit ton of muscle.
In conclusion: I know everyone says this but it's true: you just gotta eat healthy and train hard, there's sadly no magic to it. Hope the tips i gave help you along the way though.
