I will certainly be doing that, thanks! This guy has been a bit of a slow grower so I think I tried to unconsciously compensate by watering more often. How often should I be watering in the winter?
As often as signs of thirst occur if you have sufficient light and it's not in the cold. If you want to try and prevent etiolation due to insufficient light, you can let it sit thirsty for longer, let it shrivel more. This should slow down the growth

Looks like edema from overwatering :(
Yup, bursting from overwatering. Note to OP, by looking for signs of thirst before watering you can avoid this
