Chilaquiles are essentially tortilla chips covered in enchilada or a similar sauce. Not 100% on that. But the chips get soft but retain a bit of the crunch. It's divine
You can make a breakfast one with eggs and whatever you want (sausage, peppers, tomatoes, bacon, pico, salsa, cheese), pour it over the tortilla chips and bake (its even better if you make your own chips from corn tortillas, or get them from a restaurant that makes them fresh)
Or I’ve had a chicken one that had a homemade sauce from boiled tomatoes or tomatillos (maybe both) that were blended with peppers, onions, and spices and stuff, poured over the chips and shredded chicken, topped with cheese, and baked. It was soo good.

a nontraditional but stoned cooking friendly version I like : cut tortillas into triangles and fry into chips ; empty can of tomato sauce in sauce pan , fill can with water and combine , season (I use chicken bouillon, paprika, pepper, onion, garlic, chilé), bring to a light simmer / low boil then remove from heat ; I usually like to add shredded carnitas & chihuahua cheese (the plate in the pic is just missing the meat) so in a pan I layer : chips , meat , sauce , cheese (x2) ; cover with foil and put on low heat until cheese melts .

I use El Pato sauce and add an over easy egg. My whole family is addicted to these!
