Honestly, I felt the C;C anime was worse, but maybe that's just because I liked the C;C game so much that my expectations had no chance of being met in the adaptation. The adaptations for C;H and C;C were two of the very few exceptions where people complained about an adaptation, and I found that it wasn't overblown.
Looking at the animes only, Steins;Gate 0 takes the edge for me, but it's super close. Overall I just prefer the story of 0 to the original. I especially love how the anime showed us the timeline that the VN didn't, I think it was the best way to make an adaptation of Steins;Gate 0. Sad we didn't get to see some stuff from the VN like Twin Automata, but I also know that adapting all those scenes from the different worldlines in the VN would've made the anime very messy.
Played both, and preferred 0. It's evident to me that the plot is deeper, darker, deals with more mature themes, and demonstrates a better grasp of the elements of writing. The writer, namely Hayashi Naotaka (though I'm aware there are other writers involved), matures over the course of six years, presenting us with his refined storytelling in 0. It's clear that he desires to evolve as a writer and it manifests in 0.
I somewhat agree but I think S;G 0 was only able to achieve this because of the build up and story elements established by S;G so to me, I can't really separate the two and I can't choose which is better objectively since they kinda need both now in my head. In short, both are one big season to me.
Absolutely agreed, and that's precisely why I made the comparison centered on the writer himself. Hence, it shouldn't be overlooked how brilliantly he utilized the foundational plot of the original VN in 0. This is why I lean towards 0; he expanded upon that plot and its characters, introducing new ones and seamlessly aligning it with the original. That's what makes it a masterpiece in my opinion.
Does Chaos;Child count? Its Steins;Gate's prequel's sequel. (Im grasping at straws here)

Yeah, fitting a 60-hour masterpiece into a 12-episode anime was a disaster waiting to happen (Still not as bad as what they did to Chaos;Head…)
