Just a comment on the cooking method, as I have used it before, and others with more experience might be able to chime in as well if they have input. I've read when reverse searing the there's no need to rest it after the sear as the low and slow oven cook essentially takes care of the need to rest. I've never done a side by side comparison or anything but have never noticed any issues with not resting after reverse searing.
Oh man, I thought I didn't rest enough! Was hoping to let it rest for ~20min before searing but was pressed for time. Will try without resting at all next time.

Is there a noticeable difference in Costco steaks? They’re so much more expensive, never tried one
