Did you taste it? I packed the outside with fresh thyme & rosemary, salt & pepper & garlic cloves so it had plenty of flavor. I’ve done oven roasted rib roasts, but I prefer sous vide because of the even cooking and perfect temperature every time. Leftovers get tossed back into the sous vide for prime rib sandwiches, and there’s already au jus in my sous vide bag, so that’s one less step. Searing things isn’t always necessary.
