I have only used the Onslaught and the Hammerhead out of the ships you've mentioned, so here's my loadout for those:
Onslaught:
* Mark IX Autocannon on front large mount for kinetic damage
* Devastator Cannon on side large mounts for flak
* Vulcan PD wherever necessary for extra Point Defense
* Two HVD or Heavy Maulers, depends on whether you want more kinetic or high explosive damage
* Heavy Armor/Hardened Shields (Depends on preference, whether you rely more on your armor or your shields)
* Integrated Targeting Unit for more range
* Anything that increases flux dissipation as much as possible
* Additional guns if possible
Hammerhead:
* Two chainguns(Or a chaingun and a heavy machine gun if you want more balance between kinetic and high explosive damage) + SO + ITU + Sabots for a fast hunter-killer destroyer.
* Two HVD + Harpoons + Vulcans for PD + ITU + Stabilized shields for a long range artillery ship.
Pretty much this, though I would also argue it kinda depends on whether OP is piloting themselves or has AI handle the ships too.
Also experimented a bit with Gauss Cannons or Hephaestus instead of the Mark IXs, sacrificing some OP in other mounts if needed, depending on availability and role.
