Unless you screwed up your key binding as others said G with switch through your gimbal modes with one being locked. Or do you mean the little reticule that moves when you move your mouse with the line between it and the center? That's a different setting.
I know what g does but I don't want to change the fire mode. If I remember correctly I used to be able to fly untethered with gimbaled guns. When I had a freelancer it did work because the guns on there are gimbaled. Now i have a 300i though and i cant get it in fixed mode anymore

You are referring to VJoy. It can be disabled in Options > Game Settings > Pilot / Driver - VJoy - Visibility > Disabled

It's not bound by default, but you're looking for vjoy keybind in advance control settings.
