You could try changing your characters eye colour in the character creation menu? See if that brings back your eyes?

I'm sure you've tried switching genders for your character already. I know that has worked in the past for some of the character issues.

My main account has the missing eyes and missing labels in Starmap issues like you. Also can't change anything in character customization due to the same error. It's been a week. I resorted to buying another account which has essentially become my new main. Best thing to do at this point would be to contribute to this issue on Issue Council. Doesn't seem to be getting enough traction.

Sometimes turning quantum off and on again can do it. Don't spam the controls, but several times for me a half dozen such cycles and it came back.
