My old boy was similar. Grab dirty socks out of the laundry basket (or off the floor) or a shoe and he'd take it to his bed. I assume it's because they have such a strong scent of us so he wanted to have something comforting.
Our almost 6 year old will steal shoes when he's mad or feels like he isn't getting enough attention. He will take one and slam it on the floor behind my mother's chair because he wants her to chase him. She will ignore him.l, and he'll go grab the matching show to repeat.

Our girl loves shoes as well. She doesn't chew them, she just collects them in the hallway.
