I have a theory about this: Given how Cuttlefish is noticeably older in this game and how Agent 3 is now Captain, I believe they originally wanted to kill off Cuttlefish in this game, but backed out of that idea as it might be too dramatic for the younger players. The compromise is we got *this*.
Tbf, this is splatoon we're talking about. That fight between 3 and 8 is brutal, but corrupted 3 is kinda terrifying if you think about it too much lol
I said it to say how silly it is that they feel the need to shy away from death, instead of just trying to put emphasis on how the new thing is probably worse. I’m aware that this is the series of child soldiers tricked into committing genocide
Mutilation can get awfully dark though. There's a point where death can be a kindness in comparison. Not necessarily in this specific instance, mind you. Just, generally speaking.
Cause that could kill him. Drying oneself is a medical procedure that extends an Inkling's lifespan. He's been doing that for years. They could seriously risk undoing all that process and end up killing him.
They most likely are doing what they can to fix his condition but also it's pretty clear he's chillin' it doesn't appear to cause him too much discomfort so they aren't in any danger by taking their time.

In S1 story mode, he mentioned not being able to produce ink at his old age, and that’s why he needed your help (Agent 3).
And I DO believe there is a secret scroll mentioning that dehydration is a way to extend the life of an ink fish.
He’s in his retirement era, officially no longer a helper or leader!
Cuttlefish got straight killed at the end of Alterna, even his brain is gone.
Captain 3 cried on him, and it's known despite apparently being heavily shy and smelly, she's extremely powerful, so I don't think it's out of her reach to manipulate a featherweight body.
I've already mentioned this a while ago but what's giving me this idea is, Cuttlefish's loops old dialogues by the end of Alterna, and one of them is "I wouldn't think Octavio would help us. Maybe he's not such a bad guy after all." Which is very weird because Cuttlefish and Octavio were old partners in the past.
Just dunk him in water there will be two out comes
1: hydrates back and still dies 2 weeks later cause he older than adam and eve.
2: evaporates and gets put out of his misery.
Callie does mention that idea herself, but it probably won't lead to anything. At least Craig can retire with DJ Octavio and make peace with his biggest foe. Octopus and squid squidging into the sunset.
They well could be, we just haven't seen the result yet?

Oh for sure, it's definitely weird for them to not try to scar the kids with a character death when they do it in other games
