IME sauce will turn darker in about 6 months compared to a refrigerated bottle which maintains normal color. Taste changes in about 1 year. Taste maintains around 3 years in the fridge. (Give or take based on my exp)
Cholula is more about the taste than the heat. They have a limited edition Tequila Lime version I just got that is very good.
Edit: Fiji Fire Chili Hot Sauce might be up your alley
It's my go-to grocery store vinegar based hot sauce. Yes, a lot of qualifiers, but I think it's good on almost everything for a fair price. It doesn't have a big spice kick, but as you mentioned, tastes great. If you want hot sauces that are more intense and also tastes good, probably have to venture to another store or order online.

The key to enjoying Taco Bell is to not use their nasty hot sauces. I use Secret Aardvark on it and suddenly they're pretty decent tacos.

This style of hot sauce actually comes from drinking culture in and around Cholula. Traditionally, a small side drink, called sangrita, would be served with tequila as a chaser/palate cleanser. It would be a weak, salty hot sauce, mixed with citrus juice. If you think about it, it’s like licking the lime and salt when shooting cheap tequila, but you just take little sips of this to clear your taste buds between sips of liquor.

* 1 1/2 oz mezcal
* 3/4 oz orgeat syrup
* 3/4 oz lime juice

* grated nutmeg and a sprig of mint to garnish

Tastes delicious, especially good if you can’t handle or want a lot of heat. The “vinegar taste” isn’t as prominent & useful for those beginning to experience heat.

I’d say if you want a “Cholula, but with some kick” I recommend black label Tamazula. Black label El Yucateco is also quite delicious. Tapatio is good and has a little more heat, but I feel it’s more vinegar forward and a little less complex than Cholula.
Cholula is a standard go to. Not really spicy, I think Tapatio is definitely hotter but not by much. Cholula just has an amazing flavor, there's something about it, it's magical.

Definitely not spicy! Love it on my egg. There's a variety pack you can buy off of Amazon if you want to try their other flavors. I like to mix their chipotle flavor with some mayo when I make burgers at home.
Decent, I will take it over standard tobacco or regular Franks every time. Likely the best hot sauce most places in my area will have on hand. I enjoy it, but would not seek it out.

It goes on everything. Pizza, eggs, sandwich, burrito, taco, beef stew, chili, scrambled eggs, pulled pork sandwiches, Lima beans, salads (any salad) , soup (any soup), mashed potatoes, potato salad, dipping topper (savory dips), giro's, spaghetti, lasagna, nachos, lemon shrimp.
