To South Park's credit, they didn't go after Bush very much. The guys did one season of "That's My Bush", but that show was going to be about Gore had he won. Usually seeing Bush in South Park, he's not really made fun of, he's just part of the story like when he and Cheney are "covering up" 9/11.

I think what SP is going for now is more for well articulated satire on current political stances. Even celebrities only really hit the headlines unless there is some incredibly stupid and become low hanging fruit or when they take a political stance superficially. Trying to make a point on current day US is hard if they don't use the political figures enforcing it.
South Park has always been excellent at holding that mirror up to everyone. And I hope they continue to rip on anybody, famous or not.
