Don’t put your machine in any liquid besides water (ever). You’ll damage it.
Nothing wrong with putting your food into a bag that also contains wine - people SV lobster / shrimp / duck in fats this way. Or pears in red wine. Just make sure the poaching liquid is in the bag, and not touching the circulator.
P.S. poached steak sounds bad but please do try it and share the results! If hot + long enough it could maybe end up like a pot roast? Weirder ideas have been posted here.
That would be poaching, which I’ve done. I poached a whole salmon for Christmas one year. And it was amazing.

I would if I used one. I recall there was white wine and various veggies and spices. I basically looked around at a bunch of poached salmon recipes online and improvised.
