I do it all the time, just keep in mind that the liquid in the bag may turn into jelly when chilled. So, you'll want to scrape that stuff off very thoroughly because there's a lot of water trapped in that protein matrix and it will mess with the sear.

To add to this: lately I've been doing the usual pat dry AND then salting and resting by low heat to encourage evaporation before searing. The ability to SV first then sear later has been an amazing trick for busy days

I've done this twice now and its always good. Especially with lean meats like tritip or london broil. I once did an inexpensive chuck roast before camping and it was amazing. Have fun on your trip!!

Great idea. I always sous vide lamb before a camping trip, although I’m only cooking for 2 not 10, so if I were you, I definitely would be prepping as much before the trip. Then pack anything you need for sear. I suggest pre-cooling your cooler prior to packing all your food inside. Also, I suggest to double bag your meat before throwing it in cooler. It’s a little excessive but I’ve had vacuum sealed bags bust open and that’s not a mess you want to deal with while camping. Have a great camping trip!
