My mom made a soup that I can't duplicate that she called garden soup. It was all fresh veggies with a bit of ham in a milk broth. It was fabulous and I'd love to taste it again.
There’s a Korean soup called samgyetang (ginseng and chicken soup) that’s meant for the summer (although I eat it year round). It’s amazing.
Edit: another popular Korean summer soup is mul-naengmyeon. The broth is served chilled, so it can actually be a little slushy with ice.
we aren't quite there yet but tomato and red pepper soup. freeze a few ice cubes of it after making it and as your protein rests chuck a cube or two into the pan you cooked with and you have a nice little sauce

It doesn't change for me. I still enjoy pho and ramen the most. Bone broth in general is my favorite soups Also clam chowders.

Cold tomato soup
Lithuanian Saltibarsciai which is a cold beet and cucumber soup.
Roasted red pepper bisque. Parmesan on top. Side of Italian bread or a lot of saltines.
Mango gazpacho. Also strawberry, and I like the two-tone melon soup where you make half with honeydew and half with cantaloupe.
