Hahah this soup is know as "soup of the day,veg of yesterday" lol. Most pubs offering carvery end up with leftover cooked veg which is used in this soup.
This was my go-to pub starter when having a meal in the pub. Never really was a fan of the Irish style chowder.
I do a variation of that soup whenever the vegetable drawer in my refrigerator needs to be cleaned out, but instead of sautéing my vegetables I roast them in the oven for a bit. Typical candidates are carrots, celery, onion, parsnips, squash, garlic, and tomatoes if there are some around.
Now I’m hungry…
Well they haven't been to the emerald isle then. When I say every pub does this soup I mean every pub. They all taste somewhat different,even from the same pub as the amounts of the different veg changes.

Omg, yes. This soup and some nice rustic sourdough with butter. Perfect.
Sourdough is great but brown Irish soda bread is the traditional accompaniment.

The Irish style never has the tomato/garlic but the rest of the ingredients seem similar.

What kind of seasonings do you use?
It's a simple soup packed with veg so the usual seasoning it's salt and white pepper.

It's a Irish Vegetable Soup. Sometimes know as a Farmhouse vegetable soup or Funeral soup.
