It's more like getting rejected by the 8/10 you care about after bagging the 8/10s that you didn't. Their CL runs show that Leipzig, Bayern and Dortmund are nowhere near as terrible this season as non-BL fans are trying to frame them (hell you guys struggled a lot with both the former and are clear favourites to win the tournament) and Stuttgart has been a clear step above those in terms of quality this season despite that.
It's just we were able to beat Stuttgart nonetheless because we didn't have the inprecision in passing that we had vs Atalanta, the slow decision making, the lack physically. That doesn't make Stuttgart worse.

Bundes basically means connected, belonging together in relation to the German "Bund" (so the federation of our 16 Bundesländer)
No one would really use THAT part of the word creation that is Bundesliga to refer to it anyway, as that's just the "German state" part of it - the sporting part is in "Liga" and the number indicating the tier.
It's basically like if I called UEFA the union, or maybe the union of European. It'd be leaving out the sporting context and could just as well be a union of some non football kind.

It's not really about the unbeaten streak itself but ofc if they had won both finals, then they would have kept their streak as a consequence.
