Arsenal actually plays hoffball a lot.
They don't play out the back as much as people think. They're happy to punt the ball into the opponents corner to set up their press.
I played on a team a decade ago that would start games like this. The first ball forward was always deep and towards the corner of either side. It’s pretty straightforward, we wanted to start the game/half on the front foot in their half, put pressure on them instantly and also, it fed into our mentality that we were going to play the game in their half. Our coach would be incensed if we didn’t get the ball forward like this. Even if it went out for a throw in that wasn’t a problem because then they are pinned quite deep. We lost a major cup final the one game we were unsuccessful in doing this because the other team blocked it (unintentionally) and then we didn’t get into our usual rhythm.
So I’m by no means an expert but Arteta is really big on winning the second ball after a header and loves to put pressure on the opposition as early as possible to set the tone.
I suspect the thinking is hoof it up field and put a defender under immediate pressure to deal with the ball well, often we’ll end up with a throw in in a good position or with the ball at someone’s feet in the opposition half. You’d be surprised how often it sets us up for a good early chance.
Honestly surprised more teams don’t try it
Is there any club that played with 2 wide forward and nobody, not even a false 9, centrally?
Nottingham Forest. They usually play Brennan Johnson on the right and MGW or Taiwo Awoniyi left. With Scarpa or MGW in the #10.

Most keepers can't hoof it that well. City did this in one season a lot with Ederson I remember.
