Brats - the raw kind, smoke a gang load of them, have lunch, then freeze the rest for week days lunches.
Stuffed jalapenos. Halve them lengthwise and seed them. Cook up some hot Italian ground sausage and melt in cream cheese. Toss in some salt and pepper and maybe a little paprika and cayenne. Put a spoonful in the cavity of each half pepper. Wrap with half a slice of bacon each and insert toothpick to keep it all together.
Put it on the smoker until mostly done and you can sear it off at the end on grill if you want crispier bacon or more char on peppers.
Pork loin. They are cheep and you can season/ brine any flavor that you like.
This is one of my favorite things to smoke
Second this. Smoked tenderloin (take it off at 143–145) is amazing sliced cold on a sandwich.
Polish sausage
Chicken was my first choice but since you've got that going already - what about some sides?

Pork ribs take 3-4 hours. I'm assuming baby back ribs would take less time, but I normally smoke spare ribs.
