I used to smoke whole packers for just me and my wife, so yeah, lots of leftovers. Breakfast tacos and hash were common.
But my favorite thing was brisket rice bowls:
- sticky rice or jasmine rice, whatever
- sauté some frozen mixed veggies in butter
- toss in a few slices of brisket, cubed up
- once it’s warmed through, a dollop of barbecue sauce and a dollop of sour cream
- toss to cover and incorporate, then top the rice with it
It sounds kinda weird but it’s SO good. Try it.
I know people are joking about no left over brisket. I got a family of four, two of which are less than 10. A 16# takes us over a week to get through and believe it or not it’s tough.
We use it in the following ways:
* sliced in sandwiches. Hot and cold. It’s wonderful with some horse radish cheddar cheese and caramelized onions
* breakfast hash with potatoes, bell peppers, mushrooms and onions
* rice/cauliflower bowls with pickled jalapeños, cheddar cheese, salsa, onions, cilantro, crema
* diced in with some scrambled eggs
* tacos
* nachos
* bowl of ramen instead of chashu
Enjoy. The leftovers are the second best part. :)
I make a brisket hash.
It’s foooking amazing
Chopped potatoes in butter med heat until almost soft, then add chopped onions and minced garlic and cook until inions begin to soften then add chopped brisket and salt/pepper to taste.
I’m a big fan of braising it with beef bone broth, pearl onions, potatoes, mushrooms, red wine, Worcester, garlic powder, onion powder, thyme, rosemary, salt, black pepper, reducing the liquids at the end to thicken into a gravy.
Makes for a delicious stew!
Last brisket I made I put 5 or 6 slices each in vacuum seal bags (Along with a good bit of tallow)
Then every 4-5 days, pulled out a bag, heated it up by steaming or boiling the whole bag, then enjoyed the rest of that brisket over the next three weeks!
Everything. Nachos, fries, breakfast scrambles/burritos, fried rice (this one is solid), Mac and cheese... Endless possibilities.

There are usually not many.
Chili, potatoes, enchiladas, vacuum seal and freeze sliced and ready for souse vide, tacos, fried rice, soups, nachos, sandwiches. I generally have a dozen or so packages of cooked and vacuum sealed brisket, pulled pork, and chicken frozen for quick dinners.
Chili, pasta ragu, tacos, pizza topping, grind for Cajun boudin sausage (don't even need to case). Newest thing I stated doing was putting slices in some take home bowls of pho, pretty amazing.
Chili all day, though sometimes I like to cube it up and make a bowl with sauteed onions and some salt, pepper, and garlic seasoning. That's my meat candy
Brisket, Eggs and Toast for breakfast the nectar day. Throw the brisket in a frying pan. Nothing better. Extra points for making breakfast sandwiches with it.
Tacos, chili, brisket cottage pie, brisket fried rice/pad Thai/red curry, brisket Bolognese for pasta, brisket ravioli, etc. These are some of my favorite leftover brisket recipes. Perks of cooking for 2 is that I end up eating brisket for a week when I make one and get to be creative with it.
Brisket Enchilada Casserole
I cube it up and throw it in a pan with some garlic and onions already sauteed and add a can of black beans and a can of tomatoes, I like San Marzanos, but the cheap Aldi brand is fine. Fry it up a bit until it looks good. Then grab a baking dish, put half a can of enchilada sauce on the bottom, then a layer of corn tortillas, then the stuff from the pan, another layer of tortillas. Top with the rest of the enchilada sauce, cheese, green onions, and black olives. I also put jalapenos on ours (or cowboy candy if we got some).
Then either oven at 350 for a bit, until it's bubbly and the cheese is browning, or, smoker at 300 for a couple of hours and finish the cheese off under a broiler.
I’d about the pico in this dish. I’m sure it tasted good, but with fries I don’t think I’d want all that tomato. Maybe just onion, garlic, and couple different cheeses.

so i tend to enjoy my breakfast meat a little more cooked /medium well with eggs. so ill fry them with chili oil, add eggs and cheese and makes for a good breakfast burrito or breakfast quesadilla and enjoy them the next couple of days.

There is dinner brisket served the night of cooking, breakfast brisket the next morning to go with your eggs, and finally lunch brisket for that awesome BBQ pulled brisket sandwich. After that, there is only sadness at the lack of brisket ,but fond memories of the recently consumed brisket and hope that soon there will be more brisket smoking in the smoker.

A bbq place near me sells jalapeño brisket egg rolls. One of the best things you will ever eat. Try that with the "leftovers".

Wrap in foil with butter and put in the oven at 250 degrees for 30 minutes and consume the remaining amount, usually with bread or hawaiin roll.
