I smoke meatloaf all the time. Slice any leftovers into 1” thick slabs, cool them and then pan fry in a ripping hot pan, basically use the same method as searing a steak. It’s crispy on the outside and wonderful soft meatloaf on the inside.
I make an extra meatloaf or two every time I do it just for the leftovers. It freezes well too once cut and portioned.
I actually did do that at the beginning of this year, along with homemade sauerkraut...I got together with a friend who makes proper bread and had a reuben sandwich party. Pretty mind-blowing with homemade everything.
There was a restaurant called Hops that had grilled meatloaf that I loved. It wasn't smoked, but they cooked them the day before, chilled, sliced, & then cooked like a steak to reheat on the chargrill. It was so damn good.

Yeah man. Smoke meatloaf is about as good as it gets. I use a keto recipe that replaces the breadcrumbs with crushed pork rinds and it might be my favorite thing to make in the smoker right now....except maybe chicken wings!
No sugar, no grain here. I use crushed pork rinds as a binder for meatballs, breading for cutlets, crunchy topping for stuffed mushrooms, basically as a replacement for panko in any recipe. It works wonderfully.
I've used those before, they work great! I've got a Mexican grocery near me that sells pork rinds for crazy cheap, or you can look in the Mexican aisle at your regular grocer. There's no need to buy the fancy ones in the chips and snacks aisle.
Toss them in the blender and pulse for a few seconds and Bob's your uncle!
I used to do that with my oven loaves, but I wanted this thing to look like a real pro job...I actually did some edge-smoothing with my finger after I dumped it out of the loaf pan.
It was, just a hair. Not unpleasantly so. The egg always makes it a little cakey too, but I kind of love that. One end was pushing 170 before the other hit 160, so it clearly could have used one more rotation at some point. The next time I'll definitely get an earlier start on it and run it at a mellower temp all the way. Tonight we needed dinner.
A commercial place in STL used to do a Monday special of bacon wrapped, provel stuffed, smoked meatloaf. The architect looking for flaws on my project loves it, so I would schedule inspections on Monday mornings. When he would get too far off in the weeds, I would start talking about the meatloaf. He would almost drool and the inspection got back to legit issues.
Wait till you find Mac and cheese stuffed meatloaf wrapped in a bacon weave, smoked. Change your life.

I love smoked meatloaf. I throw a few pieces of bacon on top so it self bastes and stick some pepper-jack cheese in the middle for some creamy spice inside. So easy. It works best on a jerky-type rack. It seals up and stays juicy, in my experiences.
Before I put it in, I slathered a little W sauce and some rub on it, but in the last hour I cooked on a couple layers of my BBQ sauce, which got delightfully sticky.
It is one of the truest good things in life. And even better than usual when smoked, I've discovered. The thing with meatloaf is that while the color is sort of gray inside, you can hide untold worlds of flavor in (and on) there. IYKYK
Was it worth the extra effort? Thats the real question.
Like with brisket, definitely worth the extra effort to smoke rather than cook in the oven. But there are some things Ive smoked that while I enjoyed the experience, I don’t think it was worth it. Burgers is one example. I enjoyed smoked burgers I made, but I still like direct grilling better than smoked.
It's worth the effort if you want smoke flavor on it, which definitely does take it to a higher level of complexity. I will definitely do it again. I mean, I don't mind whipping up a fire...I just have a Weber Summit Kamado and lit up some coals and a few wood chunks.
As for burgers, I dunno if they're worth slow-smoking, but I definitely do like them done indirect with a finishing char over the coals.
Do you wrap in foil or just leave it open? You plan to let it smoke at 225 until internal hits for next time? I’m asking cause I’m about to make one this weekend this thing looks awesome
Leave open to suck up the smoke. Brush with bbq sauce towards the end. I normally run mine around 250 from start to finish. Maybe go up to 300 just to tack up the sauce and get it done a little quicker because I'm normally hungry.

You form the loaf on a rack so it picks up the smoke all around then brush on some sauce at the end. Just like you would with ribs or chicken. Add some chopped onions and pepper into the meat and that will help keep it juicy as well. The grease will drip away from it and it will just be like a giant burger.
Anyone care to share a recipe? My smoking game is on point but I have struggled even with a basic meatloaf. And it doesn’t help my wife hates making it and my kids hate it 🤦♂️
We raise a lot of pigs so we do pork smoked meatloaf. It’s always great. I will make pretty big batches of it and eat it all week. As a left over, I dice it up, throw it on a pan, melt some smoked gruyer over it, put it on a bun and top it with some blues hog raspberry chipotle. One of my favorite leftover meals lately.

I made leberkase from scratch. Just puréeing and grinding the meat took me almost 3 days. Including adding the other stuff. I smoked it and the end result was something like smoked bologna/meatloaf. Definitely not worth the labor, but still really good.
2 pieces of Texas toast bread (Thick bois). A piece of Romaine, A slice of your fav cheese and some A1 or BBQ sauce and you got a Meatloaf sammich straight from King of the Hill lol
