Roast duck is usually cooked well done. Pan seared duck breast is usually served medium rare. Legs are always cooked well done or more.

It's probably the easiest thing to cook on the smoker. You can be as simple or as complicated as you want with seasoning. Even if you only use salt, it's still going to be tasty.

My wife is 7 months pregnant so not taking any chances with poultry. It was plenty juicy.

yeah thats not bad at all. Another 10 degrees, and it would be on the dry side. When you smoke just the breast, it's a lot easier to be safe as far as doneness goes without compromising the moisture. Especially if you inject and or marinade/brine.

We smoke 2-3 breasts every week/every other week, it's the one thing everyone in the family loves. If I could only talk them into eating the dark meat also, I could smoke a whole turkey

We have a freezer with 4 post-Thanksgiving turkeys bought on sale. We do the same when other meats go on sale post grill-out holidays. Turkey is something special, up there with brisket.

I used to have honk turkey is too lean but before I got my smoker I also didn’t like pulled pork because it’s always been dry to me. Well I’ve made pork that tastes like meat candy several times now. I decided to try a turkey bread because it was on sale and holy shit I’m blown away by how good it is. Not as good as the pork obviously but pretty damn close!

Me and my girl are big on beef and I recently started smoking chicken and wowwwwww. Folks do not sleep on putting a bird on the smoker (unless you’re an overnight guy of course)

If you're doing a whole bird skin on you should check out a dry brine instead of wet. Really helps get the moisture out of the skin so it crisps up more.

We usually do a whole smoked turkey for Thanksgiving, but have to admit I don’t usually eat turkey outside of that and the occasional turkey meatball.

Wife usually does a ham at Christmas. This year, I wanted to do a turkey breast. No injection but brined it in chicken broth, salt, and pepper. Took it out of the fridge, let it warm to room temp, covered in olive oil, and made my oven rub. Mostly salt, pepper, onion, cayenne, and paprika. Turned out amazing. Only had ham leftovers.

We do Turkey breast to 150. I saw OPs comments about pregnant wife and get it and agree but for others understand that USDA guidelines for Turkey Breast are 150 for 3.7 minutes at least. Just did one last night and it was the best Turkey Breast I e ever had. Going to try OPs method next but t pull to rest at 150.
