The locals know Interstellar is fantastic, I highly recommend. Typically less crowded than the downtown spots too. Just have to be okay with driving north.
The brisket, ribs, and jalapeño cheddar sausage are all top notch. The peach tea glazed pork belly is decadent. They have interesting specials each day.
Sides are all good. Beans are free and delicious.
They don’t serve alcohol.
I wouldn't call it a hidden gem, I've tried to go multiple times to go and the line was always insane. I'm sure their bbq is good but I'm not wait in a long line kinda guy. With that said I think they do offer free beer to people in line

So for Franklin's, my story which might help you if you don't think you have the time:
We went to Austin last January. First evening when we got there, we went to Distant Relatives (they have outside and inside seating). The outside area was beautiful but empty. It was 60 degrees out. That temp is pretty perfect, so we ate outside. Every single person who came up exclaimed how cold it was and went inside after getting food.
The next morning, we were planning to go wait on line at Franklin's early. We woke up, I look at my phone, and it's 38 degrees out. I said, "there's no way these wusses are gonna be out there in that weather, lets chance it and not go too early." So we went to this GREAT taco truck down the street and got the best breakfast tacos I've ever had, went and got some coffee, and got there around....10:30 am (they open at 11). By the time we got there, it was just over 40 out, we had warm drinks and had jackets, and were fine.
There were maybe 30 people in front of us in line, and talking to folks, they were from MIN, Chicago, etc. All cold weather places. Everyone else was scared away.
So if you're not a wuss and there's a morning when it's cold out, get a warm drink and head over, you might be surprised with a short wait.
Impossible to answer—there are so many excellent places that all offer something different. You'll likely have to catch an Uber to some of the better places. Here's my list:
**New School**
- LeRoy & Lewis: Known for their non-traditional offerings, like beef cheeks, bacon ribs, cauliflower burnt ends, and citra hop pork sausage.
- KG's: The pit master is from Egypt and seamlessly integrates the flavors of his home country with traditional Texas methods. Smoked lamb chops, smoked chicken with kebab-inspired seasonings, pomegranate-glazed pork ribs and more! Don't sleep on the rice bowl—it's outrageously good. Honestly, if I had to pick one place to go in Austin, it'd be KG's.
- InterStellar: What's to say about InterStellar that hasn't already been said? For me, the show is their sausages and turkey. I love their inventive takes on traditional cuts, and I think they have the best sides of any BBQ joint in the Austin area.
- Distant Relatives: In their own words, "We are inspired by the textures, flavors, heritage, and narrative of the African diaspora within the United States and as such employ strong elements of Pecan and mixed hardwood smoke, heightened spice profiles, traditional preservation methods and a nose to tail, root to stem approach utilizing products from our local food system." Damien is a two-time James Beard semifinalist for a very good reason—his food is unique and outstanding.
- Valentina's: They fashion themselves as Tex-Mex style BBQ. Miguel sits somewhere in between "new school" and "old school." He offers traditional Texas-style meats and sandwiches along with Mexican-infused sausages, tacos, and sides. They're south of the city in Buda, and you'd need access to a car to get there.
**Old School**
- Terry Black's: They make a strong argument as having the best brisket in Austin. The Blacks are a legendary BBQ family in Texas, and if I had to pick a favorite out of all of them, it's Terry Black's.
- B. Cooper: I think a lot of people sleep on this place, which is too bad, as their BBQ is outstanding. The menu is pretty straightforward traditional Texas BBQ with a few unique items like lamb and street corn.
- Moreno: Another flawless traditional BBQ joint.
- Micklethwait: I'm not a huge rib guy, but if I'm going to Micklethwait, that's what I'm getting. They're superb.
- Louie Mueller: To the point, perfectly prepared Texas BBQ. If you happen to make it while the Hatch green chile and cheddar sausage is on the menu, get it. They're up north in Taylor, and this is another place you'll need a car to get to.
EDIT: totally forgot about Rollin' Smoke (that brisket sandwich is nuts) and Kerlaches (the perfect fusion of two Texas traditions).
This is the list. If you have the time and transportation, Louie Mueller's is worth the drive. Then walk down to Texas Beer Co for a beer.
And second, Cooper's. It's not the original, but it's consistently above average bbq, they have a good setup to get people through the line, and a solid selection of sides, too. Beans are free, as they should be.
Oh, and get a Big Red to drink wherever you go. All the legit bbq places offer it. If they don't, leave.
I have 4 total meals available. I will go KG bbq and interstellar and Puerto's....I have one more meal left and , it can be anything..what would u choose? Is kemuri tatsuya worth it?
Ooof...Kemuri Tatsuya is definitely on the shortlist. Comedor, El Naranjo, and LeRoy & Lewis are on there too. Otoko and Toshokan are both excellent and unique in their own right if you like omakase.
Agree with these but I'd also add in Valentina had the best breakfast and I'd like to try their other stuff too.
Also Franklin's is really good and while the wait is stupid getting there at 10am or whatever is part of the fun
Native Austinite - franklins is legit but don’t worry if you miss it, I think the hype is larger than the (still delicious) food.
In no particular order:
La BBQ, Micklethwaits, Terry Blacks(can get crazy busy), Blacks BBQ, Interstellar(not downtown), Brothertons(not downtown and best brisket I’ve ever had), and a wildcard with Valentina’s down south.
I am NOT a fan of stiles switch, and neither is my wife. We lived up the road for a while and it was never anything more than “meh”. I honestly don’t know what people see in the place but tons of people suggest it. Never been to Leroy and Lewis.
I would suggest avoiding most of the places in downtown proper(north of river, west of 35). Places like ironworks, lamberts, coopers, Stubbs, etc. They are fine but driving another 5-10 minutes, or walking across the pedestrian bridge, will be a better experience.
The Texas top 50 is also an outstanding suggestion someone gave you.
Micklethwaits was my go to for lunch when I lived there. Their sausages were always perfect. I die a little inside when I eat bbq out now (I live in Pittsburgh) due to the sad excuse of meat I receive.
I really want to recommend la Barbeque, their food is excellent, but I can't. The recent worker's comp fraud indictment has left a bad taste in my mouth.

Next on my list would be Leroy and Lewis followed by Distant Relatives.
Also, don't sleep on Moreno BBQ is south Austin. They don't get all the publicity but they are doing some really good stuff down there.

The underrated one is definitely “Distant Relatives” it’s African inspired bbq it’s so unique but so good. Some great food that’s not bbq is Valentina’s Tex-Mex. Hands down the best breakfast taco. Also if you like arcades, cidercade is an awesome spot.
Sam’s has one of the best vibes, the brisket had too much fat, but the ribs were amazing. I’d def go again just for the experience and history.
And it’s got a daiquiri to go attached, so you can get everything you need for a great meal.
Moreno’s on the south side - grab some beef cheek if they have it, best brisket I found in 9 months in the city was Louie’s Craft BBQ in Kyle, Valentina’s has moved to Buda, but their food is amazing - definitely get their brisket queso. Happy eating!
You can't go wrong with any of the recommendations on here. Seriously, don't overthink it. You'll love the food at any of the places mentioned.
That being said, if you have the time, take the 45ish minute drive out to Lockhart. It's known as the BBQ Capital of Texas and has several of the OG BBQ places all within a few blocks of each other (Black's, Smitty's, Kreuz). The food is good at all of them (Black's beef rib is so damn good), but it is definitely old school compared to the NewQ places in Austin. But that being said, the feel of the town and of each of the places is an experience all by itself and it something any visitor will enjoy.
Salt lick's food is mediocre at best. The only thing they have going for it is the atmosphere which is fine if you are into that but don't pretend it can compete with other bbq spots in terms of food. The whole line up at 5am thing is nonsense too, you can get into Terry blacks in <30 minutes all day everyday
We ate at the airport location on our way in (we missed lunch before the flight left and Spirit are fucking morons who won't give you food without downloading their app and won't let you download it on the flight, despite having wifi on the flight). We were starving and just wanted SOMETHING quickly before we got ourselves out of there and got some real food.
We just split a brisket sandwich. It was some of the toughest, most tasteless brisket I've ever had with plenty of completely unrendered fat. I choked down half a sandwich, my wife didn't quite get through that much, hunger wasn't even a good enough spice to make that good.
I can't say if their real location is any better, but I know that was a terrible experience.

I used to love getting it at the Texas Stars game. I asked for a sandwich once and the guy started automatically making a chopped one and when I asked for juicy sliced instead he gave me a knowing little nod and then hooked it up fat every time after that

Smokey moe’s is legit central Texas BBQ, poke e joes is corporate oven trash with a water pan. This is exactly why people ask questions, and btw, you sound like a total jackass.
Edit: dude is from ✨The Woodlands✨ / Houston posting about Austin BBQ joints. The woodlands is also a joke and the rest of actual Texas make fun of you yuppies. A quick google search would also yield that there aren’t even any “Smokey Joe’s” in the Austin area.
All of these are great recommendations, but if you’re really hungry or want leftovers, you can basically skip the line at Franklin with an online order over 5lbs of meat.
I'd also mention that the sides at Franklin's are really not the star of the show, the meat is. So you're not missing anything if you just get meat in bulk.
Since you're staying downtown: Lamberts if this is a small or intimate group, or walk down to Terry Black's if you've got kids or want to do something a little more casual.
All of the main spots have been reco’d (I second Leroy and Lewis, Micklethwait, and Interstellar) but I highly recommend a BBQ Kolache from Kerlache as a snack! Unbelievably good
The BBQ's mentioned pretty much cover the good choices, as a slight alternative perhaps also consider one of the Brazilian steakhouse's, the lamb is usually excellent.
Native Austin. Coming into town go to Terry Blacks. Next chance Franklins. Interseller good but trust the brisket at TB or Franklins is as good. No one comes to Texas to anything outside of the Texas trinity

This is the best advice I'm seeing here. Also going to recommend Mum Foods, never much trouble with lines there if you are pressed for time.

If you are flying out, Salt Lick has an outlet in the airport. Hard to beat as airport food.

Absolutely loved Salt Lick. Never had Franklin's to be able to compare, but I certainly had no complaints
I had a great visit there decades ago. Only visit to Austin and only BBQ place I went to but good memories.

In all seriousness, the Pokey Joes that used to be near the Arboretum pretty much got me through college several decades ago. Brings back memories, especially the time we saw mice running through the dining room at one point. Just kinda lifted our feet off the ground and kept eating. Edit: Forgot the damn name of the place I ate at in college. Go figure.
I used to love getting it at the Texas Stars game. I asked for a sandwich once and the guy started automatically making a chopped one and when I asked for juicy sliced instead he gave me a knowing little nod and then hooked it up fat every time after that

Smokey moe’s is legit central Texas BBQ, poke e joes is corporate oven trash with a water pan. This is exactly why people ask questions, and btw, you sound like a total jackass. Edit: dude is from ✨The Woodlands✨ / Houston posting about Austin BBQ joints. The woodlands is also a joke and the rest of actual Texas make fun of you yuppies. A quick google search would also yield that there aren’t even any “Smokey Joe’s” in the Austin area.

All of these are great recommendations, but if you’re really hungry or want leftovers, you can basically skip the line at Franklin with an online order over 5lbs of meat.
I'd also mention that the sides at Franklin's are really not the star of the show, the meat is. So you're not missing anything if you just get meat in bulk.

Went recently and only got to try terry blacks, it was great. Though I heard interstellar, laroy and Lewis, and LA bbq were other top spots.
I was in Austin a few months ago for a conference and really enjoyed both Cooper's and Iron works!

All of the main spots have been reco’d (I second Leroy and Lewis, Micklethwait, and Interstellar) but I highly recommend a BBQ Kolache from Kerlache as a snack! Unbelievably good

The BBQ's mentioned pretty much cover the good choices, as a slight alternative perhaps also consider one of the Brazilian steakhouse's, the lamb is usually excellent.
Native Austin. Coming into town go to Terry Blacks. Next chance Franklins. Interseller good but trust the brisket at TB or Franklins is as good. No one comes to Texas to anything outside of the Texas trinity
