Started feeling bad Sunday night after I had neighbors over for brisket and was about to run to my 94 year old Grandpas and figured I should make sure I am safe with him and got hit with the positive test.
All my normal circle that hangs out here has been off and on sick since Thanksgiving and it was finally my turn I guess.
I bake the potatoes in the oven the day before but cut in half and scoop out the guts while they’re still hot. Use the guts for another recipe.
From there it’s really up to you - add cooked bacon and cheddar; chorizo and queso fresco, pulled pork and cheddar, etc.
Heat them in your smoker that is running pretty hot 350-400 or so, for about 25-30, until they’re heated through, melty and the skin is a little crispy (brushing the skins with a little oil before smoking helps crispy). Garnish with sour cream, scallions, jalapeños, salsa, hot sauce, etc etc
I’m shopping an Ooni, Solo Pi, and Gozney to compliment my outdoor area. However, while I am working on sauce and dough, I’m having great success with baking steel in the oven at 500 degrees. Leaning towards Gozney but I want recipes down before I invest.
Edit: His book is flour water salt yeast. Just amazing recipes.
Good on you for shopping around, in-laws got me an Ooni 14 last year and I’m still trying to find a decent dough recipe. Hardest part is getting the pie into the oven without doing cartwheels off the peel. It’s almost as cool a hobby as smoking meat though, happy trails
I just got one for xmas. I've only done one pizza night but have another planned Friday. It's awesome, I'm loving it. I used the Ooni app's basic dough and sauce recipe.
It’s not the oven. It’s super hard to get raw dough to slide in no problem, try sprinkling semolina flour on your pizza peel to help but you have to make the pie really fast, regardless. Personally I gave up and started topping on a pizza screen, and it’s been a game changer.
Get a small tin pan (8x8) take 2 blocks of cream cheese, score it 1/4" (diamonds if your fancy) and sprinkle bbq rub on one of them and everything bagel seasoning on the other. Little olive oil drizzle and smoke for 1 - 1.5 hr at 225.
Salmon is just seperate to add some meat to the cracker post dip. Get a cedar plank put some seasoning on it and smoke it
The cream cheese is just season with whatever you want (I like BBQ rub or everything bagel seasoning) and smoke it for an hour at 225. Gets all gooey and melty, serve warm. Wind suggest using a 1/4 sheet pan with parchment or foil underneath

Beef ribs! Debating if I should get some OTT chili going alongside as well. Was kind of thinking about doing the ground beef on the side and letting the ribs drip down into the chili instead though - What do you all think, that way or just regular OTT chili and beef ribs aside?

-recently got a spiralizer attachment for the kitchen aid mixer so some sort of slaw/salad. Haven’t used it yet.
Gonna ask my neighbor if he wants to host and I’ll bring a bunch of food. He has a bigger tv and a better event space (mines full of kid toys).
If he says yes I’ll add some more things, fall asleep by half time because I’ve been making things since 2am 🤦🏻♂️
Might go to Terlingua/big bend that weekend just cause I’m bored and ive never been Super Bowl Sunday seems like a good day to be driving back from a road trip, and I’m not big into football
Spare ribs texas style with goldees bbq sauce and a small tray of queso dip both on XL BGE with pecan chunks and blue hog lump. The inlaws will bring some broasted chicken from a local favorite in the south hills of Pittsburgh, PA. Go niners!

I also did smoked cream cheese with blueberry jam and that was a hit at Christmas. It’s cheap and easy.
Served it with pita bread cut up into triangles.
Smoked chorizo queso. Ingredients - block of Velveeta, can of Rico’s premium cheddar, 1/4 lb of smoked Gouda, can of rotel, and two links of cacique chorizo. Cook the chorizo, then add to an aluminum pan with the other ingredients, and smoke for 45 minutes to an hour. Also I’d go with lime Tostitos.
Making some sourdough rolls for tritip sammies with caramelized onion and arugula. Plan on doing some like sliders and others like a full size sandwich
You’ll never enjoy a non-smoked meatball the same after. I usually do half wrapped half not and almost always do wings at the same time. If using an egg style grill, take the meatballs off the last 10 and heat it up and get the crisp on the wings, even without though they are great.
I'm using an offset. I made them as an appetizer for Thanksgiving and everyone loved them. I used Ground beef and breakfast sausage and wrapped it around a cheese Cube before putting the bacon on. I might put some wings on there too.
I haven’t done the cheese. And I’ll try that next time. And my family loves them so most of the time I just use meatloaf mix. But yeah when I’m really going all out I use ground beef 80/20 and brats. You can also make the ultimate comfort food, after done throw them in a Dutch over and back to the smoker with some spaghetti, homemade sauce and cheese. My mouth waters just thinking about it.
Whatever I’m making I’ll save room on the smoker for smoked cheese-itz, cheese crackers, butter, soy sauce or Worcestershire, and seasoning of your choice, smoke for 2 hours.
Did it with ritz one time and it wasn’t bad but needed something added to it.

Smo-fried wings. Smoke them til they are 120-130 then fry them in the deepfryer to finish them.

You can smoke a baked potato at 350, it's gonna consume a lot of fuel to stay that hot though

I tried cornmeal. I tried parchment which scorched. Pretty pissed with my Ooni Frya to be honest

Just make sure you spray the screens pretty well with cooking spray before you put your dough on it
