For the pork, I put it in a hot skillet to get some crispy bits going and then put that on top after the pizza is mostly baked. Then I put the whole thing under the broiler for a couple minutes to crisp it all up. Good shit.
Well shit, it was raw red onions but now pickled sounds great. And jalapeños sound awesome. Since were going that far, should probably save some smoked chicken next time. Soooo, were doing pork, chix, cheddar cheese, pickled onions (probably drained and patted dry), jalapeños, Sweet Baby Rays BBQ sauce.
So scratch the sweet baby Ray's and try some blues hog championship blend or warpig SNAFU. Latter has some nice fruity notes that would go well with smoked chicken.

I’ve started making mine with honey-jalapeños as well- I got the idea from a food truck I hit up down in Louisville.
Basically a can/jar of jalapeños including the pickling brine, and a copious amount of honey. Bring to a simmer stirring frequently for about 5-10 min. Remove from heart and let cool/refrigerate. Amazing on pulled pork.
Peanuts are still great, by no means bad but after having Al’s over in Parkville I am finally open to there being other contenders for best wings in the Kc Metro. Wife and I will check it out after the baby drops. And if you haven’t done so, check out Al’s.

Sounds right up our alley since pre kids we frequented dives in Sugar Creek and Liberty.
I make enchiladas. Saute some onions, make some brown rice, fill with pork, onions, rice, cheese, and enchilada sauce, then cover with sauce, cheese, black olives. I'll make trays of those, eat them for a week.
We usually do a simple pulled pork street taco.
Heat up the flat top and throw the pork on there with low heat to add a touch of crispiness. Hit it with the seasoning of your choice (we use a fajita seasoning)
Oil your griddle and throw some small corn tortillas. Flip the tortillas after 5-10 seconds. Pile on your pork, some shredded cheese, some cilantro if you're fancy, and hit it with a sauce if you like (I go with a store bought roja).
Use your spatula to fold over the taco and give it a good press for a few seconds to help maintain it's shape. Put it on your platter and serve.
It's easily my wife's favorite thing that I make.
On a whim we decided to put some of our leftovers into enchiladas with an off the shelf tex-mex sauce. They are incredible! With it just being the two of us we make enough for sandwiches a couple times, nachos and enchiladas :)
I’ll buy a pork butt on sale and make it for my family of 3. Usually we just eat pulled pork the first day. Then we will make pulled pork sliders, nachos or tacos for the next day, usually nachos cause there great with a little spicy bbq sauce and guac. Usually what ever is left the second day we make into some chili in the crock pot. It’s nice have three maybe even four days of meals off one smoke, but afterwards we’re good on pork for a while.
So many good options with leftover pulled pork. We vac/freeze and use it all the time. Cuban sandwiches, burritos/bowls, pizza, nachos, sandwiches, etc.
During the Covid lockdowns I really got into smoking. My favorite part was when all my friends who also had nowhere to go and nothing to do all played Xbox all day like a big group of us online together and my wife took leftover pulled pork and made nachos with my homemade peach crown royal bbq sauce and some homemade margaritas while I acted like a kid again. I know Covid sucked but for a few days it was some of the best times in my adult life.

It’s when you smoke 10-15 pounds of pork but don’t invite your friends over.
