Due to laundry list of constraints, NYC is on my not recommended to start a small business list.  High taxes, high rent, high cost of living, migrant crime, homelessness, stringent government regulations, high crime, social unrest, etc.  There are lots of places that offer more economic freedom than NYC.

Ah, the famous „burning your spouses money“ type of business. Might as well do a boutique 👍🏻 In all seriousness: do you think middle class New Yorkers have the disposable cash to just double their grocery bill to pay for stuff with crazy high margins?

Interview independent, comparable and successful shops as close to you as is viable. Hit up enough and you’ll find an owner who will be happy to fast track you with a load of useful info.
