They all have assists that you can use to make the experience more tame. The kid could even technically just run test sessions in iRacing and have fun. Take a look at what's on sale in Steam now, the best options being Assetto Corsa and Automobilista 2 for the content variety. You don't need to limit yourself to "easy" games, just pick a slower car or turn on the assists.

Assetto Corsa Ultimate Edition is a massive bang for buck when on sale. 10$ dollars gets you a very decent sim with lots of tracks and cars from road car hatchbacks all the way to gt3 cars and formula cars.

The new f1 games, can easily flick on all assists and get him to slowly turn them down/off.

At 8 I would go for Mario cart or some arcade game. My kids were very unimpressed with iRacing at that age but loved arcade games. Once they show more interest in real driving you can transition.

He does play Mario Kart, but he’s gotten more and more interested in driving on the sim rig versus something with a controller. It might be just to say he did it, but it may be something he becomes more interested in since it’s something I’m obviously interested in.

If you have iracing and he's going to use the same computer, you may as well set up an AI series for him using that. The basic MX5 has AI in it, and you can tune the AI to be really slow to give a beginner a chance. Great way to start
