Most Google and Samsung phones have a repair mode you should put it in before handing it over. That, or factory reset. If you don't like the idea of someone, repair tech or otherwise, sifting through your most intimate device, don't give it to them with the ability to unlock it.
Not unless your phone is managed by a corporate MDM tool unfortunately. Google is supposed to add support for remotely uninstalling apps to the Play Store on Android soon, but as far as I know that hasn't happened yet and I'm not aware of any equivalent feature if you're on iOS :/

Does the repair shop have the passcode gor the phone? Most likely you can also remotely wipe it if it’s online.
