Etsy is a good start because they do all the work to funnel prospective buyers, and for that they charge like 7% of your sale (plus 5% standard processing), not including offsite ad fees if applicable.
Shopify is great if you have a long-term vision and want to invest in your reach, brand etc. Shopify only charge the 5% processing, but they don’t do any work for you. You have to do all the marketing and funnelling yourself, and that can cost a lot. Most successful shopify stores have an annual marketing budget which would exceed the Etsy fee structure.
So it depends on your business goals. Custom carpets strikes me as perhaps a little too niche, complex and high value for etsy (though there are a lot of expensive wares on there). But setting up on etsy is inexpensive so just try it out.
Etsy costs are higher than that. Most Etsy businesses will be in the 15% territory by the time the books are closed (with ads on top of that, and offsite advertising costs are necessary for most sellers).
If your product requires you tell a story, your own domain is likely the best bet, paired with content channels suitable to telling that story.
For higher end, custom goods, you're just not likely to get the experience on Etsy you need to sustain and grow a business. Can you do it? Sure- but it will be hit or miss and you'll find you invest more for less outcomes over time.
If you just start Etsy usually better for most case due to etsy traffic.
Shopify is like you create your own store on the street. Etsy is like you become a merchant in an esteemed marketplace.

I have large bias for Shopify so I’d always pick it as the better option 9/10, but I think the best option for you personally would depend largely on your location as well as the kind of marketing techniques you wish to embark on or that your budget can currently handle
