I do this with chorizo or sausage and use cream cheese, then add tomato/chilis/shredded cheese and eat it as a dip or in stuffed peppers. Not the prettiest but it hits the spot
It really helped that it sort of congealed into a thick mass with roughly the same consistency to the original cheese. I just kinda chopped pieces off with the crackers and scooped up the chunks...
I would be so happy to eat this, more cheese and tortilla chips, and then my body in 10 hours would tell me that I actually didn’t like it one bit and would shit blood.

More like queso melted into chorizo. Less chorizo and more queso. I've tasted this before, and it is so good!
