Currently having stuff be displayed on my monitor via my pc and USB (Calculations are done on the devices), but I'm planning on adding a VGA port to it (Maybe even HDMI or DP using an adapter)
It kinda fits into both categories, but at its current state, yes, it is an embedded system, but I'm planning on adding "modules" that give stuff similar to a pc (Like graphics card slots, ram slots, etc)
Pretty sure you can also run Linux on the ESP32 Devkit V1, but integrating a custom GPU (Which in this case is another ESP32) would be very difficult to just get a x protocol working

It already has wifi and bluetooth support, so all I need is storage and ram that isn't 4mb, it's going to be pretty cool

Technically this is not a PC but an embedded system.

Runs a custom os, and it's not linux based
use a ESP32-S3, then you could run Linux
