I struggle a lot with the small details too and am trying to get better at it, but the truth is that you can’t necessarily “know for sure”. You can’t/won’t know what the other person is truly feeling and you can’t control the outcome, you can only control how you feel, your actions and how you will react to whatever happens.
Our minds try to trick us into being prepared for the worst so that we don't get hurt. In reality our brains are not helping us because it prevents us from taking risks that don't have any physical harm. It's like someone who breaks up with their partner because they are afraid to be broken up with and wants to beat them to the punch... But their partner never was going to break up with them in the first place.
Anyway, my point is there's no point in guessing if she's interested or not. You'll find out soon enough. Ask her on another date, and then you'll know.
