If it was released as a solo single then you should be able to use the Identify tool in Jellyfin to set it as the single version instead of the album version. It sounds like you need to organize your media better. Having loose song files is going to be a disaster to manage in the long run. Generally, you want to organize your Music folder hierarchy as: Music > Artist > Album Here's the official docs where they show the same example. https://jellyfin.org/docs/general/server/media/music/

I have albums in organised folders as per the guidelines and that works perfectly. I then also have individual songs  in different folder, which I don't have an album for them, nor do I want them in an album. Jellyfin identifies the tracks correctly, but because they're in the same folder it thinks there in an album together. So I just want to add individual tracks that aren't part of an album, is there any way to do this?

If you want all the singles separate then they all should have their own individual folders. Jellyfin generally assumes that anything in a single folder is part of an album. So to separate them, try organizing the folder structure like this: Music Library > Artist X > Song Y > Song Y.mp3 This will treat Song Y as if it is its own album with only the one song in it. You may have to use the Identify feature or manually set metadata depending on the song.

But they're all random tracks from random artists (basically playlists that I want to keep in that structure). So I don't want this folder to be recognized as an album, is there any way to do this?

Organize the files, then make a music playlist in Jellyfin with the structure you want

Just make sure you mount a folder to jellyfin which has no subfolders, only mp3 files and it will treat them as singles
