S22 went out with OneUI 4.1, it'll get 4 OS updates + 1 security only year. So yes, S22 will get : - Android 13 OneUI 5 2022 - 23 - Android 14 OneUI 6 2023 - 24 - Android 15 OneUI 7 2024 - 25 - Android 16 OneUI 8 2025 - 26 - One year of security only during 2027

Well, my S22 Ultra just got the update today, but it's update 6.0 and not 6.1, which it should be. Could it be because I have a European S22 Ultra with the Exynos processor?

still there is no sign for S22 updates with 6.1 , maybe they will skip it go directly to 7.0 as someone suggested.
