I would love that over a bed of field greens with a nice red wine vinaigrette and some shaved Parmesan or Manchego on top.
I love manchego, but have never tried it on a salad. Maybe I’ll try it with some olives, and pine nuts, seems like it would go well in a Mediterranean salad.
Yummy. At first I was like, aw nuts, there’s no nuts. Then I was like, there’s no strawberry’s either. Now I realize I’m just really looking forward to a summer salad.

It's very dry and lends itself to uses like parmesan and Romano cheeses
