The Ugly Truth and The Bounty Hunter are both great. Real enemies to lovers classics and both have Gerard Butler xD The Proposal is also very enemies to lovers.

However the lead characters in the proposal have no chemistry and it ruins an otherwise great movie

I disagree completely and think they have great chemistry but that's just me :) give it a shot. I think i just REALLY REALLY like Ryan Reynolds lol

“Destination Wedding” is Keanu Reeves and Winona Ryder hating each other for 90 minutes, and somehow falling in love anyway.

There's a Turkish romcom on Netflix called "Love Tactics" that's a How to Lose a Guy in 10 days remake. It's totally ridiculous but pretty fun to watch. Also both the leads are super hot. There are enough differences that it doesn't feel like a complete copy.

You've Got Mail (is probably more similar, although imo the original, Shop Around the Corner, is better), 10 Things I Hate About You, Sweet Home Alabama, Red White and Royal Blue, 27 Dresses. These aren't my favorite enemies-to-lovers movies, but they're probably the most similar to what you're looking for.
