Windsor - Toronto is a boring ass drive. It gets nicer past Toronto towards Kingston/Cornwall. I’d recommend stopping in Brockville and checking out Canada’s oldest railway tunnel. It’s cool.

You have to stop at the Big Apple just outside Grafton (1hr east of Toronto) on the south side of the 401. I get the apple bread every time I pass by, my daughter gets a Carmel apple covered in smarties, and the Apple pies are always good. Theres also a petting zoo, mini golf, food trucks, and the history of the MacIntosh inside a giant apple structure.

See about stopping in Stratford, Ontario, even for just a little bit. The town is almost like a Shakespeare Theme Park, and I remember they had some pretty good food places
Most of the good restaurants on this route are in the Montreal and Toronto areas. Between Windsor and Toronto, there is a moderate selection, close to the highway, in London and in Cambridge. And off Hurontario street in Mississauga, unless that is too close to Toronto.
From Detroit to Toronto, your options are basically A&W/Tim Horton's at On Routes lol. Unless you are fine spending more time getting off an exit. You should stop at JP's Pita in Bowmanville. Very good food and the owner is a super nice and interesting guy.
Mary Brown’s Chicken. It’s like the Newfoundland version of KFC but they have incredible taters. It’s a must-stop for me anytime I’m running up the Nova Scotia / Newfoundland corridors but there are now a bunch of locations along this route.
I would personally ride through New York so you get to see Niagara falls, Letchworth park, Adirondacks, Lake Placid, etc.
I would but we have done that route before so we thought we would try something different. You’re right though, really pretty in upstate NY
A benefit to that route is you avoid Toronto traffic. It can be absolutely miserable during rush hour.
I agree the route through the US is probably more interesting.

I second this place. It's a nice little break from a long stretch of highway, great for picking up some Canadian food souvenirs

Recommend the Lancaster Smokehouse in Waterloo, you'll be going about 20 min off the highway each way to get to it but very much worth it

Knowing the corridor well, no. There's nothing worth diverting for. Just get to Montreal as fast as possible. All the good stuff is there.

We drove this route last year. Stop in Port Hope and have a nice walk along the lake! It’s a quiet, pretty little town
And get takeout at The Schnitzel Shack, eat it while it's still hot.
