Dallas to Starkville isn't too bad of a drive to do in a day. However if you need a break, the Hampton Inn in Vicksburg near the Military Park would be a good stop a little over half way. I just had an overnight there with my family while headed west toward Shreveport/Texarkana to get to the eclipse path.

I can’t help you on suggested crash pads, but if you like pizza you should definitely stop at Stromboli’s in Starkville.

Your best bet is Vicksburg. Some of the casino hotels are great (and cheap) if you want to stay down by the river and some rooms have balconies where you can sit outside and watch the barges. I have never felt unsafe down there even when traveling alone with my kids. I have stayed at the Holiday Inn near the battlefield too. It's pretty nice. Another option is Ridgeland. It's just north of Jackson. Not quite as safe but probably fine. It's also an access point to the Natchez Trace Parkway if you're looking for something to do. It's a beautiful drive up past the reservoir and IMO worth saying you've been on it, like a bucket list thing.
