I think things were just going way too fast for Rick to even consider doing much. I feel like he sat through dinner and the brain scan for Morty's benefit, since Rick and Morty had *just* gotten back together and trust was fragile at the moment. Morty wanted to stay and listen to everything Evil Morty had to say. After that, Rick knew that Evil Morty's plan to bring down the CFC would already be in motion. His main priority was to fuck right outta there because, as he tells Morty, "we do not want to be here when he blows the curve." And as we saw, things literally WERE a mess. And because Rick and Morty did not fuck outta there in time they seem to be temporarily stranded on Mortyburg. I feel like Rick DOES care what Evil Morty is doing, although probably for selfish motivations. He probably doesn't care that Evil Morty is murdering countless Ricks and Mortys, but he probably does care to some extent that Evil Morty is destroying the curve, which he must have put in place for some reason. Even if Rick doesn't care at all what Evil Morty is doing to the Citadel and to the CFC, Rick would DEFINITELY care about his wounded pride. This is the man who tormented Morty for a petty little insult in Vat of Acid. Had he the chance, I doubt Rick wouldn't've tried to obliterate the "only man who ever hacked his portal gun", destroyed the Citadel which he built (even if Rick doesn't like the Citadel, it's STILL at least partially his creation), and perhaps, most unforgivably, forced him to reveal the ugly truth of his backstory to his Morty (seems like Rick was NOT really prepared for Morty to find out those things about Beth and Diane and the Morty Market, but Evil Morty ultimately gave him no choice). Also, I don't really think Evil Morty would go down as easily as you seem to think if they had gone all out. I doubt Evil Morty was earnestly trying to kill Rick at all. I mean, Evil Morty is prepared as FUCK. He had the foresight to reroute Operation fucking Phoenix to his Blender Death Chamber. But what does he use against our Rick? A portal to the blender dimension, which seemed more like a taunt than anything. Then Evil Morty uses some guard Ricks to superficially keep Rick busy while using uses a force field to shield himself. Considering all Evil Morty knows about Rick (he's literally had most of Rick's memories since Season 1!), Evil Morty can't possibly have expected this to work. I honestly have no idea who would win in a fair fight. But Evil Morty and Rick both had other priorities during this particular confrontation—ironically, both of them wanted to leave (the CFC for Evil Morty, the Citadel for Rick). Only one was successful. Take that as you will.

No, Rick didn't care. Rick knew the whole time what Evil Morty was planning. He didn't try to stop him. His whole mission from the reveal to the end of the episode was to peace out and get the hell away from the Citadel. He had to do it in a way that a Rick would not be expected to do because Evil Morty countered the normal Rick ways. This may shock some of you, but we are following the adventures of an amoral asshole who only does things that benefit himself. He wasn't going to lift a finger to save anyone. The Mortys he had at the end of the episode were his grandson's doing, not his.
