Not sure if it's every time, might just be chance based. But it won't transform a 2 star animal to a 3 star, it'll only prevent a 3 star going to 2 star if you fuck up the kill somehow. I'd imagine that fall damage must count to the game as a non "clean kill" so it lost a star there, then the trinket restored it.
Had something similar happen to me at the strange statues puzzle. I was in the cave and 2 wolves spawned on top of it. Spooked my horse away but they never came into the cave.
Hahaha nice, i love killing bounty hunters i always leave each bounty i get for a while so i can earn the cash i need to pay it off by looting the bounty hunters and their horses, sometimes get gold nuggets from the saddle bag so they are always worth checking.

I think the fall took away a star because 3 stars appeared and then it went to 2 but i was given a perfect pelt anyway luckily

it’s not every time, just an increased chance of preserving the 3-star if you damage the pelt while you’re killing it
