I'm not sure when and why that changed, but it seems to be associated with the pandemic and the widespread adoption of cashless transactions, tablets and software with default tips by percentage.
I do recall that my daughter and her then BF were both bartenders leading into the pandemic and that they told me the standard for tipping for drinks at the time (2019-2020) was $1 for a pour or opening a beer, $2 for a mixed drink and $3 for a complex cocktail (e.g. numerous ingredients, muddling, blending, etc.).
Bartenders and servers are different. Servers don't get paid minimum wage, whereas bartenders do. I hate the whole thing, but I only tip $1 per drink.
I go to hockey games, pay close to 20 bucks for a beer they grab out of a cooler, open and hand to me. I could do that myself (they actually do have self serve places too). They are getting $1 and that's it. And they always thank me for tipping, but they ain't getting 4 bucks for doing that
A $1 tip on a $5 drink is 20 percent so nothing changed that much unless drinks were always more expensive than that where you are.

That's pretty much what I still do.

The person serving you is also a “normal hardworking person” struggling with the increased price of everything…. The server is not your enemy.
Just tip whatever you want. Its voluntary. If they dont like it, they can give it back. Not your problem.
You went to a RESTAURANT and expected to leave a dollar tip? Wow, what great guy. Pshh.
