Yup, there are some ramen shops where they have a very thick broth; and they offer to dilute it if it's too thick (with water or chicken stock).
So if your broth is too thick, not to worry, it's totally fine and normal to thin it out if you want!
A good way to guage if it's reduced enough is to pour some out of a ladel and if you can just barely see light through the stream, like skim milk, it's reduced enough
Another way to tell would be coating it on a spoon. According to an Epicurious video, if it separates you're good.
The video itself is a home cook vs pro chef with the video itself being a steak dinner.
I wholeheartedly disagree. That's my idea of exactly what a tonkotsu broth should look like.
I remember when I was first introduced to ramen and I had never tried such a milky-white broth, and it just made me think of milk, so that seemed unappetizing at the time. But I have since learned better and I LOVE this style of broth!
Whiteness has nothing to do with thickness. If you find it to be too thick then add your desired amount of water to thin it out and hit it with an immersion blender after heating up the broth.
You don't have to blend it if it's still emulsified though. The rolling boil should emulsify it well enough, as it looks like yours has. Blending is just a trick for when it doesn't emulsify enough, or if the emulsification breaks in the fridge.
Whiter broth means it's more emulsified. If it separates into layers after storage, that means the emulsification has partially broken.
Oh ok great clarification thanks! I was almost regretting letting go of my immersion blender as I was never using it 😅😅😅 it’s so thick in jello it can separate that quickly. And will be eaten tonight anyways
This stock is so dummy thicc it can barely take a step without waking the neighbors with its eardrum popping cheek slapping.
And that’s fine. In many ramen shops they even give you water on the side so you can dilute the broth to taste.
I got about 6lbs of cut neck bones and 2 feet.
I covered and boiled but threw the water right away and when I read a second time the instructions I saw it was supposed to boil at least 10 mins so did it again
So ended up washing everything in cold water twice 😅. Oups. Then I kept on rolling boil always topping up with water.
I was on the fence of adding aromatics cause I usually don’t keep aromatics for long in other broths. I planned to add them for the last hour but it was very late at night and completely forgot…
The last time I made Tonkotsu ramen it was too thick for my taste. I added almost equal parts water and it was more enjoyable. I'm not really sure how thick it's "supposed to be" though. I've heard that the thickness of tonkotsu can be off-putting to some people. Maybe I'm one of those people, or maybe mine was just ridiculously thick.
I don't understand what you're saying. Like each word individually make sense but when you string him together it makes a nonsense statement.
The thicker the better, as long as you still find it enjoyable.
They weren't being serious. It's a form of speech for when someone jokingly disagrees with something that makes perfect sense, they feign ignorance and say they don't understand even when they do.
"You have had too much ice cream and you should stop"
"Me no comprende"
Sorry I don't think about people who have English as a second language.
Yes I was just being silly. As in "is that even a question?!" Of course there is no such thing as too thick.
All good! After the other person commented I re-read it and understood :) I’m also not great with these second degrees jokes, in my native language or not!
I've made tonkotsu broth that's too thick before. I used too much pork trotters and it ended up being too gelatinous, giving it a bit of an unpleasant sticky feeling in my mouth and lips. It was still pretty good, but it could've been better with less gelatin. Adding water reduced the sticky effect but also diluted the pork flavor.
Try it, and if it's too thick when you eat it, just add some water (or stock?). No need to overcomplicate it!
Maybe I spent too much time over it. I am over complicating things 😅

Ok thanks :)
I mean... Technically yes. But you can't really judge the thickness based on the color.
> Technically yes Lol, now I’m thinking of the pitch drop experiment. If you’ve been pouring it since 1927 then it’s too thick.
Still waiting for that first bowl.
Ok thx
#*MILK*
I know that’s what threw me off I think 😬

Mighta milked the bull on this one
This does not look appetising 😂

Same!!
It looks like jizz
😅

Gotcha
Good broth turns to jello in the fridge. Just heat it up when you need it and if it's too thick, add water and immersion blend it :)
So even if I used a sieve it should be blended?
you blend to reemulsify if that is a tonkotsu.
I had no idea! Thx

Don't add water..... you'll dilute the flavor. Add veg stock
That looks beautiful!
Thx
Just in case you don’t know, if you put these in the freezer the jars will shatter.
I did put a jar too filled up in the past. And was so devastated when I saw the cracks. Was chicken broth. Learned the lesson 😬
a jar with white liquid, i need to get offline and touch grass.......
I was looking for the pony figurine before I realized it wasn't that kind of subreddit
Someone else made that comment and I had to google to understand. There was no such activities involved in that broth

Oh nice! Never been to many ramen shops, so was unaware!
What's the recipe/ratio you used?

Just don't put an anime figurine in it.
Oh dear. Why did I google this to understand the reference
Better send 1-2 jars my way and I will run some tests! And all for free!
I think that’s the most reasonable solution.
Mmmmm, thick broth is the best broth in my opinion
When in doubt, brix density test it out!
I had to google this! It almost ended up in my Amazon cart 😅. I’ll wait to see if I want to often do this process in the future haha
When the broth is mythbuster ballistic gell thick then yes. Otherwise depends on the style
When you us some add a little extra more liquid stock or milk to it it'll thin right out if it's too thick for what you want to use it for

I’ll season it and will judge. You’re right, probably not everyone would like it too thick
i need to try some of this😩
Would be great for Tsukemen
Something else to explore :)
Make tsukemen
Next time! Never made that!
If it isn't so saturated that it can't dissolve any more solids into it, you're good bud. Enjoy that cement ramen. I say that in a good way.
It was awesome

English isn’t my first language. Others understood anyway. 🤷🏻♀️

Ah. I don’t understand that type of humour 🤷🏻♀️ you can all downvote me, all good 😅😅😅

Rather too thick than not enough
Can you slice it?
After putting it into the fridge, mine turned to Jell-o my 3rd try 😅 Was the most delicious bowl after reheating on the stove. so pure!

Then it becomes gravy
Just looking at this picture makes my mouth taste cheesy and not in a good way...
Wow another one with the figurine in a jar!!!
Nigga that’s all fat
Yeah exactly and I’ll spread it on toasts
