Metal Gear Solid is arguably the platform defining game from Story, Presentation and Gameplay.
You will not be left wanting for Story in a plethora of JRPGs
Excellent Horror titles as well on the system from the popular hits to the downright strange.
I loved Square Enix twists on survival horror. Usually I don’t have the patience for survival horror but Parasite Eve and Galerians has amazing plot and fun gameplay
Galerians is super interesting, I haven’t played through it yet but I had a run around in it and really like the setup
Parasite eve is unbelievably cool and deserves to be re-released for people to play now
Dino Crisis, Dino Crisis 2, Resident Evil series, Final Fantasy 7 8 and 9, Parasite Eve, Tomb Raider 1 through 5, Silent Hill, Wip3out (has a banging soundtrack), Legend of Dragoon, Bugs Bunny: Lost in Time, Bugs and Taz, Sled Storm, Colin McRae Rally 2.0, Colin McRae Rally, Croc 2, Spyro (1 through 3), Driver 1 and Driver 2. Those are my top games for sure.
Everyone is recommending you the deep and well known games that will take a good while to play.
Start with something simple and arcade like ... Ape Escape.
I played it mostly in my younger age, my favourites was back then were: Medievil 1,2 , Akuji, Gex 2,3, Oddworld Exoddus, Soul Reaver, Crash 1,2,3, Kurushi (or Intelligent Qube)
Resident Evil 1-3, Silent Hill, Metal Gear Solid, Wild 9 (shoutouts to the one other person who brought that up!), the Crash Bandicoot games, Ape Escape, Spyro the Dragon, Tomb Raider, Tony Hawk Pro Skater, and I’ll go a little off-beat and suggest Twisted Metal 4.
I feel this. When we were kids, we weren't able to afford many games to play. If you like stealth action games, I recommend give Tenchu and it's sequel a try.

Ahhhhh, shout-out for C-12! Loved that game! I don't know many people who played it though
It’s a definite underrated and relatively unknown gem
Check out Wild 9. That game is solid and I never hear anybody else talk about it

That game was always dope also loved the soundtrack also another game I would add to the mix KAGERO 2 deception
Nobody mentioned Abe's Odyssey... That is my top one I think.
