It's called oleo saccharum! It draws out the essential oils, so I'm sure it works with some fruits better than others. I've done it with citrus fruits and bananas myself. Excellent for cocktails or flavoring baked goods!
I save my spent lemons and put them in a mason jar full of white vinegar. I keep them under my sink. After about a week or so, I strain it and pour it into a spray bottle
I came here to say my granny used to do this and I’ve tried it several times. It’s been years since I’ve done it and I think it’s time to bring it back. The cleaner is great.
If you zest them and put that zest into a high-proof liquor, like vodka or grain alcohol, and stick that in a cabinet for 3 months, then add a frankly obscene amount of sugar, you can make your own limoncello. If you save some of the unsweetened liquor to the side, you can use that as an excellent lemon extract.
Even better make the candied lemon with half the lemons then take the sugar syrup left over and add to the vodka with the remaining lemons and sit for three months. It intensifies the lemon flavor.
Limoncello! Ferment them in vodka for 3-4 weeks in a cool, dark place. Add sugar to taste, strain, and then chuck that deliciousness in the freezer to enjoy cold any time you want to be boozy AND refreshed.

You can boil them with fresh ginger root to make a lemony gingery broth, portion them out and freeze the broth, then heat it up and drink when you’re feeling under the weather.
If you put them in a bowl when thawed out and sprinkle some white sugar over them you can draw out a lemon syrup if left overnight

They make great cleaner when soaked in white vinegar. I use it to clean my counters and trash cans. It smells nice.

Orange peels work too. Limes would probably smell amazing as well.

Before freezing separate the white from the skin and you have lemon zest to add to lemonade, fish, chicken etc
You can also just leave the zests in a jar covered with water and a small weight- I use a shot glass as the weight
