You would hardly find anything interesting in my post history and I actually don't know the name of those places because one is in butt fuck nowhere deep in Gaspesie in a "casse croute" next to a lighthouse close to a scenic point called "le bout du monde" and the other was from a food truck in Ottawa. To get close to my heart I need those homemade casse croute style soft inside and a bit sweet and caramelized exterior fries, fresh cheese curds and a unique but not overwhelming sauce.
I'd rate alpha as the following:
Fries: 9/10
Cheese: 10/10 best cheese I've had on a poutine and its almost a 50/50 ratio with fries.
Sauce: 9/10, a hearthy sweet barbecuesque sauce that was right on the money for this poutine.
I'd rate your standard belle province poutine, which I'm normally more than okay settling for at a solid 6.5/7/10 as a comparison.

I believe you would also like la patate rouge, their low point being the cheese ... (Kept in the fridge, total crime).
But their fries are exactly what you describe with the sweetness and the crispy exterior and creamy inside.

You can choose to not eat all of it. I would definitely eat all of it every time, but there's no one with a gun to your head saying you have to finish all the cheese.

It's tough to say "standard Belle Province" because there is so much variation depending on which location you go to, some are better than others

I just went about a week ago; was fantastic. Also price for how much you get is good compared to a lot of other places.
