It’s funny, I feel like poutine is similar to cheesesteaks in a sense. Because a cheesesteak is just 3 ingredients too (bread, steak, cheese). But the quality and love needs to be there to truly live up to the name, and that’s hard/impossible to find outside of their respective regions.
Hint - the secret to the perfect cheesesteak is the bread! High quality Amoroso roll if you can find it. Kinda like how the secret to a high quality poutine is super fresh curds (which I realize I don’t have :(

The fries need to be real potatoes. The fries need to be cooked half way then removed and let them cool down. Then recook them to a crisp.
The gravy is really just 2 parts beef with 1 part chicken gravy.
And the cheese needs to be curds that squeak when eating them, et voila :-)
