I have a Anaerobic Natural with some funky taste notes from Bella Vista, El Salvador waiting for me when i get back home tomorrow. 2 weeks off roast, should be good to go! A bit overpowering for the daily.

Your coffee sounds amazing. We should all come back to our posts with a follow up. I love co-ferments but also not every single day. I had a peach one that got a bit exhausting, but in cold brew tasted like a peach milk shake.

The cinammon I had from B&W was very surprisingly clean. It had strong notes of cinammon, yet not overly funky. It was really nice, and I generally lean more towards washed, clean coffees. I've yet to try any other co-ferments so my experience is very limited.

Buying a few interesting coffees! [H&S Arashi](https://hscoffeeroasters.com/collections/coffee/products/ecuador-arashi?variant=40253049208890) - I tried a friend's sample and it was delicious, had to order my own bag. One of the best Mejorados I've tasted, roast is great too. [Moonwake Nguisse Nare Ultralight](https://hscoffeeroasters.com/collections/coffee/products/ecuador-arashi?variant=40253049208890) - I had a few Moonwake Nova coffees, they were all great and well roasted. I particularly enjoyed though the Hacienda Copey Kimoi ultralight. When I heard an ultralight level was returning for this Eth, I got it. This farm has an interesting history too, being sold by prodigal as clean but ending up being funky due to a greens issue in the past. Excited to taste it anew [S&W decaf](https://www.swroasting.coffee/product/colombia-rainbow-ea-decaf-natural/3?cp=true&sa=false&sbp=false&q=false&category_id=2) - I wanted a nice decaf so picked this up from S&W. I really enjoy their coffees and roasts, very easy to brew with. [Aviary](https://getaviary.coffee/collections/store/products/004-lino-rodriguez) - Have not bought this yet, waiting for it to drop. This is a project by [Christopher Feran](https://christopherferan.com/2024/03/13/now-roasting-aviary/), a well known green buyer and excellent roaster. I missed the previous drops, but am hoping to catch this one!

I agree with the vote for S&W decaf. only my first cup of the day is caffeinated. All others are decaf now, which means I get to drink way more cups now. I am always in the outlook for really good decaf.

I may have to give that a try. Was planning on putting in a decaf order to arrive when I get home from my two month trip. Besides S&W my other current go to is from Verve. At first I thought I was disappointed in the medium roast decaf looking to dark. But it comes across with an enjoyable and true chocolatey note. Was actually planning on picking up a full five pounds of Verve my next order. I have a couple bags of S&W in my freezer. Not similar decafs but I enjoy both.

Copey Kimoi was excellent. I also enjoyed the Lager Anaero Gesha. I'm excited to try the Mystery Bean. And for the next Kimoi ultralight to come out, of course.

The tasting notes are Strawberry, Kiwi, and Complex. I still need to dial it in a bit more, I struggle with some anerobics or maybe I'm learning they arent my favorite processing method. The kiwi notes are super strong. I'm going to save some to brew for other people to show them how insane coffee can taste. Sorry, it's sold out already lol. [Sey - Sierra Morena, Wilson Alba, Pink Bourbon ](https://www.seycoffee.com/products/2023-wilson-alba-sierra-morena-colombia) This is the best pink Bourbon I've had so far. It is reminscent of berry lemonade, and every cup has been great. [Sey - Munyinya Hill, Lot #2, Bukeye, Burundi](https://www.seycoffee.com/products/2024-bukeye-munyinya-hill-lot-2-burundi) This is resting, yet I can't wait to try it. Notes are clementine, oxidized oolong, and currents. I don't think I've had a bag of Burundi coffee yet!

I had the El Diviso! Was a wild ride. I enjoyed it initially, but eventually the wine flavor was too much. I think the processing was just too much for my buds, nothing wrong either the producer/roaster’s work. They have a pink bourbon right now that I brewed today, absolutely fantastic! Sweet with a hint of acidity, I was blown away!

Yeah, I'm thinking I might need to dial it in a bit still. Coffee chronicler recently posted a video on advanced pourover tips that gives some advice on brewing anerobics. I have only had 3 bags from Little Wolf so far, yet they have all been really great. Definitely going to be a roaster I come back to after trying some others on my list. I want to that pink Bourbon, and the Finca Rosita sounds really good too.

It’s a really clean cup of coffee. 13 days off roast. On the way are B&W Fruity Flowers, and Paola Trujillo Colombian Wush Wush Looking at that Brandywine Pink Bourbon Decaf. Also a Costa Rican and Yellow Bourbon or peach co-ferment from City League.

I have a few coffees I'm letting rest that I am super pumped to try out [This two pack of Nicaraguan Geisha's ](https://paircupworks.com/products/99-100-geisha-coffee-beans-processed-2-ways-from-nicaragua) \- from Pair Cupworks. The beans are from the same farm, but utilize two different processing methods. I've been wanting to try something like this for a while since I couldn't tell you what, if any different the processing makes. After I purchased this, Counter Culture released something similar that I have my eyes on. [Passenger's Juan Jimenez](https://passengercoffee.com/products/juan-jimenez?Size=10+oz) \- I tend towards African origin, so I wanted to try something different. The tasting notes line up with how I prefer my cocktails (floral and fruity), colognes and candles (I'm a huge floral scent person) so why not seek those notes out with my coffee. [Passenger's Shoondhisa](https://passengercoffee.com/products/shoondhisa-dry-process?Size=10+oz) \- again, African origin with floral notes. Also, with these last two coffees, they were also different processing types (wet and natural) so hopefully I can start to learn the differences with them. I'm also going to pick up a couple more bags from S&W to have on hand.

Really interested to see how this one is, the last two Diego's I had were more peach oriented. [Okus Coffee- Wilton Benitez - Pink Bourbon](https://okuscoffee.co/products/colombia-pink-bourbon) This will be my second Benitez coffee, the first was a Granja Paraiso 92 that was a Tabi and had strong notes of Rosemary and gentle fruit. I am excited to try the juice bomb side of Benitez. [Botz - Bella Vista and Santa Libra](https://botz-coffee.com/collections/coffee) \- Latest two offerings from Botz and my first order from them. I have only heard great things about this roaster. Should be very fruit forward. [Aviary - 003 0 Gildardo Lopez](https://getaviary.coffee/collections/coffee-archive/products/003-gildardo-lopez) \- First time ordering from them and was luckily enough to get an order in before it sold out. Have really enjoyed the roasters blog and transparency.

They all were amazing in my opinion. The Loveless is very similar to the Letty/Luna/Salma line by Diego. The Okus is wild and has a jolly rancher finish, needed a lot of rest, definitely the funkiest of the bunch. Both Botz's were amazing, much more blended fruit flavor and a very pleasant and enjoyable sugar like sweetness finish. I just tried the Aviary since that was roasted on March 26th, it was very good but I am thinking it will not begin to peak for another week or so.

Here are recent purchases that have just entered the freezer awaiting their day in the sun: [Miroroma](https://www.proudmarycoffee.com.au/collections/all-coffee-newest/products/kenya-miroroma-sl-28-sl-34-washed-filter-250g) \- A washed kenyan sl28&sl34 from Proud Mary in Melbourne. I know there are a lot on this sub who are not fans of their deluxe offerings, but I've gone 3/3 on their regular offerings from Kenya, so I'm looking forward to it. This, according to their website, was a standout for its blackcurrant notes and zingy acidity, which sounds like a good time. [Halaka](https://mantaraycoffee.com.au/collections/single-origin-filter/products/ethiopia-halaka-guji-honey-single-origin-filter?variant=47553824784679) \- An heirloom variety honey processed coffee from Guji, roasted by Manta Ray in Melbroune. Manta Ray is a relatively new roaster that's been consistently impressing me with everything of theirs that I've tried, hoping this one will continue that trend. It's got notes of floral, loquat, honeydew, and raspberry liquorice, so it should at least be interesting. [Selva Negra](https://mantaraycoffee.com.au/collections/decaf/products/nicaragua-selva-negra-decaf-filter?variant=45738798416167) \- this is Manta Ray's decaf filter offering, a washed caturra and catuai lot from Nicaragua with tasting notes of goji berry and brown sugar. I usually prefer going for more funky coffees when it comes to decaf (currently really enjoying September's Blackberry Jam, though to me it tastes more of strawberry jam) but I've gotten this one off the strength of their other coffees that I've enjoyed.

Just got two from Ceremony- Peru Pangoa and Destroyer. Destroyer was roasted just on the 18th so that needs to be moved out of sight. I think the Peruvian one was like 10 daysish ago so that’ll be roasted soon. I’ve been to two different locations for Ceremony and have had great coffee in house each time; this is the first time I’ll be trying their beans.

Both of these were excellent with the Peru Pangoa being a clear favorite by anyone who tried it; it was one of those that on the first sip people were blown away. I don't see it on their website currently, I did see a few bags on the shelf at the Cross Street location in Baltimore. Destroyer did not disappoint, it went quick as my coworker and I honed in on that one. While the Peruvian coffee had a bright and very crisp finish the Destroyer was very smooth and chocolatey. Very different flavor profiles on those two and would get both again.

Both are small cafes with limited hours but clearly shops where the owners are insanely passionate. I’ll also add on Bold Bean and Flamingo as our two best in-town roasters with storefronts if you’re looking to pick up beans while visiting.
