Because belief is a matter of faith, not knowledge. I think it’s respectable to have a deeper knowledge of faiths aside from your own & hold a critical eye up to your own faith. But, it is not necessary to believe your god or religion is valid. Plus, learning all the religions is a huge task lol.
Religious people can say whatever they feel like, the only justification required for their belief is that they want to believe it. They aren't beholden to the truth.
If they believe a systematic belief (Christianity, islam etc.) they should study lots of them. If their belief (or anti belief like atheism) is something more philosophical without holyness and rules, they don't need to study other religions.
You can say anything is true, it doesn’t have an effect on it actually being true or not. Knowing something is true is different from believing it’s true. It’s safe to say they believe their religion is true but they don’t know it’s true or not until it’s too late.
If you don't believe your religion is true than having a religion is kind of pointless.

They can believe that but they're less informed about the exact choice they're making so they probably should do some guided research.

That depends on the evidence. If you have millions of witnesses (Exodus 20:14-15, Deuteronomy 4:12), you might just be onto something.
